Enchaud Perigordine is pork loin or rolled breast pricked with garlic and preserved in goose or duck fat, or lard. It is served cold, generally with a salad or pommes de terre rissolées (hash browns). Many people buy it ready-made in jars or tins.

A similar dish in the Cantal is called jambe de porc.
