orge

barley

France is the biggest producer of orge (barley) in the EU, the third most popular grain crop in the country. It’s mostly grown in the northeast, where much of it gets made into beer. There are recipes for pain à la farine d’orge, a North African speciality, but you need to go to specialist shops to find the flour.
