Pebronata is a sauce made of tomatoes, peppers, onions, red wine, olive oil, thyme, garlic, parsley and sometimes chilis, and the ingredient that give it a distinct Corsican taste— crushed juniper berries.

It’s also a stew, made with pork or kid or veal or beef, simmered in pebronata sauce.
