In France elderberries are often used for flavouring sauces that accompany game dishes.
Fleurs de sureau are the flowers, which are also used for flavouring. You may see a sorbet à la fleur de sureau; it’s also one of the aromatics used in Byrrh and the primary one in St-Germain.
