The New York Times called meltingly soft Kanougas the world’s finest caramel. They were invented in 1905 by chocolatier Jacques Damestoy, who named them after Kalouga (a town in Russia) owes its name to the Russian sophisticates in the social whirl of Biarritz at the time.
The original flavour was chocolate; others now available include coffee, coffee with hazelnuts, chocolate with walnuts, vanilla with almonds and salty caramel with a touch of piment d'Espelette.
Find them in Socoa-Urrugne at the Maison Pariès, now run by the fourth generation of the Pariès family, as well as at other Pariès boutiques around the Pays Basque.
