Tapenade, et terre cuite provençale

Spread on little strips of bread or toast to go with your apéros, tapenade combines either black or green olives, ground up with anchovies, capers, olive oil and garlic.

You can buy it ready made in jars, but the homemade version is much tastier. There are at least a dozen kinds, some including sun-dried tomatoes (tomates séchées) and various herbs.
