pine de Barbezieux

The Pine de Barbezieux is also known as pine de Rameaux (‘Palm Sunday dick’) because that’s when they are made in Barbezieux Saint-Hilaire and around in the Charente. Made of pâte à la choux with chantilly and other creamy goo, they honour of springtime and all its hopes of fertility.

Cornuelle

There’s a triangular shortbread biscuit with a hole in the middle made in the Poitou-Charentes called the cornuelles, made at the same time and for the same reason!
