Canned flageolet beans

Flageolets are white beans picked before they are ripe, while still pale green.

You can find them dried or tinned; they star in the classic Easter dish, gigot d’agneau aux flageolets, cooked with onions, herbs and butter and served alongside a leg of lamb, with plenty of herbs, garlic and juices.
