Banker’s sauce (sauce banquière) is not surprisingly a rich one, using chicken stock with butter and cream, Madeira and sliced truffles. It’s often served on tournedos.

It can also include mushrooms and chicken quenelles, and is used to fill vol-au-vents or accompany ris de veau.
