saucisse de Toulouse

the sausage of the southwest

A pair of raw Toulouse sausages (in French, saucisses de Toulouse), very similar to the Catalan botifarres.

Saucisse de Toulouse, made of pork and not very spicy, is sold everywhere in southwest France, in big coils or as individual sausages; it shows up on every barbecue menu and in many versions of cassoulet.
