Biscuits in French is a dry ittle cakes (but unlike a biscotte, they no longer have to be twice baked to be a ‘biscuit’), but they need to have some crunch.
What an American would call a ‘cookie’ is a biscuit in French, but a ‘cookie’ in French is only a chocolate chip one (don’t ask me why!). Shortbread cookies are sablés.
