A traditional dish from northeast France, houchepot is made in its most complete version with oxtail, shoulder of mutton, salt bacon, beef rib, veal breast or neck, salt pork, pig's ears and trotters and sausages simmered with carrots, parsnips, onions, leeks, celery, potatoes and herbs.
