Quiques are made with flour, eggs and chard that has been parboiled and ground fine, rolled out and cut into diamond shapes, and served with fresh tomatoes, basil and cheese.

You’ll have to head up the Val de Roya to try some, though, as they are seldom seen anywhere else.
