The Corsicans like their aubergines, especially stuffed. Also known as aubergines farcies à la bonifacienne, these are filled with breadcrumbs, onions, Brocciu and basil, then baked in the oven. They taste best in beautiful Bonifacio, a city that looks like no where else on earth.
They are also known as mirizani, aubergines à la corse or aubergines farcies à la corse.
