Corsican goat and sheep cheese

Venaco - Foire du fromage 2005 - Stand sartenais

Made in southern Corsica and named after Sartène, Sartinesu is a pressed goat or sheep cheese with a dry crust made all over the south of Corsica, mostly by sedentary producers. This is a fromage de garde which Corsicans could keep over the winter, preserved by its hard dry rind.
