Wedge sole (Dicologlossa cuneata)

Dicologlossa cuneata. The céteau or wedge sole is a flat bottom dweller, smaller than other soles. They are mostly caught at night from June to September off the coast of La Cotinière in Charente-Maritime, where they fish is also known as langue d’avocat (‘lawyer’s tongue’)!

It tastes similar to sole but is more widely known in Spain than France.
