Rouen’s apple candy

Sucres de pommes were invented by an apothecary in Rouen in 1592, combining sugar arriving from overseas along with the local apples, which he reduced to a concentrate. He sold it as a remedy for melancholy and sore throats. Today most versions add a squirt of lemon juice.
