chocolate covered ‘cannon balls’

Boulet de Metz

In 1934, pâtissier Léon Bohr invented the boulet de Metz, a sweet shaped like a cannon ball in honour of a popular song at the time about a local artilleryman.

The boulet is quite complex: a little biscuit filled with ganache encased in chocolate flavoured almond paste, which is covered in caramel, the whole then covered with dark or milk chocolate mixed with bits of hazelnuts.
