A pork and beef caraway-flavoured sausage popular in Alsace and Lorraine, Germany and Switzerland, nicknamed the gendarme in France; they echo the colour of the uniforms worn by the police in the 19th century and are always sold in pairs.
Landjäger has a slightly crunchy texture and comes in individual portions, making it a popular snack for hikers, but it can also be boiled and served with potatoes and a mug of beer.
