galipettes

giant mushrooms

Cooked stuffed mushrooms.

Grown in the caves of Saumur, giant button mushrooms (champignons de couche) are nicknamed galipettes or ‘somersaults’, because they lose their footing and tumble when they get too big.

Stuffed with shallots and parsley and butter (or snails or anything really), they are a speciality across Anjou.
