Dijon’s spicy biscuits

Glacé mince de Dijon (spécialité dijonnaise)

Côte-d’Or winegrowers liked to dunk hard glazed biscuits in their wine. These glacés minces are made out of pain d’épices, baked in a boudoirs pan and coated in glaçage royal (made with powdered sugar and egg white), flavoured with lemon vanilla and chocolate.
