raspberry meringue


Invented in 1993 by the Syndicat des Boulangers–Pâtissiers du territoire de Belfort, this dessert is a bit like an upside down pavlova. Fresh raspberries are covered with an almond cream and and topped with an airy almond meringue sprinkled with hazelnuts and almond flakes.
