chichi frégi

French churros

Cuisson de beignets dans de l'huile.

L’Estaque just west of Marseille is the cradle of chichis (or chichis frégis as they are called in Provence)—long doughnuts made of wheat and chickpea flour, flavoured with orange blossom water and fried in olive oil until crispy, then covered in sugar. The French version dates from 1907.

chichis at a fete forraine

They are a mainstay of fête foraines (fun fairs) all across France; you can usually smell their irresistible aroma before you see the stand.
