Alsace-style ravioli


Knepples or Knepfle are generally round form of pasta, sometimes with a filling, especially in Alsace. In August Waldhambach in Alsace celebrates them in its Kneppelfescht. and topped with served with fried croutons and crème fraiche.

Knepps or Kneddeln are also in the Moselle. These irregularly shaped dumplings are made with milk, often, have a sweet-savoury topping such as lardons and prunes.

Others, such as the Kneff made in the Vosges are similar to spaetzle made with plenty of eggs, milk and butter, often with a meaty sauce.
