A saganaki is a small frying pan, but it's become synonymous with the famous fried cheese starter, made with a wide variety of Greek cheeses, and served hot with lemon. In Cyprus they nearly always used halloumi.
Prawn saganaki (γαρίδες σαγανάκι, garides saganaki) and mussel saganaki (μύδια σαγανάκι, mydia saganiki) are also favourite starters, made in a similar small pan, and cooked in a spicy tomato sauce. You might even see σαγανάκι λουκάνικο (saganaki loukaniko), with sausage.
