The Andros Omelette - Fourtalia

Traditional baked omelette of potatoes, syglino or country sausage, milk and local cheese with a touch of thyme or fresh mint made on the islands of Andros and Tinos. On Tinos they might add fresh artichoke hearts in season.

Also spelled φρουτάλια.
