kefalograviera

κεφαλογραβιέρα

Hard, salty, flavourful cheese made with sheep's milk, often compared to Italy's Romano, and used especially for grating on pasta or baked dishes.

It's designated ΠΟΠ (PDO) if made in Western Macedonia, Epirus, and Aetolia-Acarnania and Evrytania.
