The much-loved mid-day snack that keeps a Greek going until a late lunch. Feta mixed with egg is baked in flaky golden phýllo is the classic, but that can include a mix of cheeses, including kefalotyri and anthotyros; on Crete myzithra; kaseri is a special favourite.

Other cheese pies, such as the sfakianes pites and alevropita don't use phýllo at all.

Τυρόπιτα σκοπελίτικη (tyrópita skopelítiki) A rich coiled cheese pie made on Skopelos, that is usually fried (but sometimes baked) and often topped with sesame seeds.
