Butter.

Greek cooks mainly use butter (not only cow's milk butter (αγελάδας) but also sheep's butter (βούτυρο πρόβειο) in pastries and desserts). Also see stáka.

αλατισμένο βούτυρο (alatisméno voútyro): salted butter

ανάλατο βούτυρο (análato voútyro): unsalted butter

μαργαρίνι (margaríni): margarine
