Gaís is a soft white Pontian cheese with a sweet taste, made into a long belt shape that shreds into fibers like mozzarella. Often eaten with a salad, but also good melted in sandwiches. Much of what's available in Greece today is made by the descendants of Pontian refugees around Sérres in Central Macedonia.
