πετιμέζι

Grape molasses, or σιρόπι σταφυλιού (sirópi stafylioú) used as a sweetener since ancient times, with a light honey and fresh grape aroma. Usually made from Agiorítiko grapes, the must is boiled down until thick. It's used like honey to sweeten traditional biscuits and pastries, and you can now buy it in shops.

Known as epsima in Cyprus.
