Crushed red pepper flakes, named after Bukovo in North Macedonia where legend has it the chillis were first pommeled, along with their seeds, which supply the heat.
Boukovo shakers have long been a mainstay in Macedonia's tavernas, and can now be found in pizzerias around the world.
