Stew (from the medieval Venetian stufado). Stifádo can be made with any main ingredient, including seafood, although the default is beef. Greek Australians make kangaroo stifado.

What makes a stifádo stifádo is its large quantity of small whole onions, often boiled in advance. Other ingredients include tomatoes (usually) vinegar and spices—often cinnamon and cloves, but there are hundreds of variations.
