Sturgeon. The ancient Greeks knew all about its eggs and used to bring caviar (chaviari) back from the Black Sea. In later days, Greek merchants supplied the Topkapi Palace with Russian caviar.

Today sturgeon are raised in the Ambracian Gulf by Thesauri for two kinds of the precious eggs: Ossetra and Baerii.
