ξύγαλa

Xýgala is a rich summer yogurt made by the Pontic Greeks in East Macedonia, using either cow's or goat's milk. It recalls the ancient Greek oxygala (οξύγαλα), which the ancient writers claimed was the 'elixir of life,' especially when served with honey.
