Voláki

βολάκι

Egg-shaped volaki is one of several cheeses made on Ándros, using pasteurized cow milk. It comes in two forms:

Βολάκι Μαλακό Άνδρου (Voláki malakó ándrou): Soft, young Voláki, a buttery cheese people like at breakfast, with fruit and honey. It's also good in cheese pies.

Σκληρό βολάκι (Skleró Voláki): 'hard volaki'. As it ages, the cheese takes on a yellow hue and full bodied buttery taste, good with tsípouro and grated on pasta.
