Egg-shaped volaki is one of several cheeses made on the island of Andros in the Cyclades, using pasteurized cow's milk. It comes in two forms:
Βολάκι Μαλακό Άνδρου (Volaki malako androu) Soft, young Volaki, a buttery cheese people like at breakfast, with fruit and honey. It's also good in cheese pies.
Σκληρό βολάκι (Sklero Volaki 'hard volaki') As it ages, the cheese takes on a yellow hue and full bodied buttery taste, good with tsipouro and is ideal grated on pasta.
