Also known as μελίπαστο (melipasto), this sheep's milk cheese translates as 'tender honey'. It comes from the island of Limnos, and usually made in the late spring; after to set to dry for a spell, it hardens and tastes a bit like feta; it's good for saganaki or with pasta dishes.
They also make it on the neighbouring island of Chios.
