Artichoke. Tínos is famous for them, especially in αγκιναρόρυζο (angkinarórizo), rice with artichokes (and tomatoes and often fennel) and fourtalia.

One of the joys of rural Greece in March, April and May are the vegetable trucks that pass throuogh the villages with their loud speakers, bellowing ‘AAAAANNNNG—KEEEEEEEE—NAAAAAAAAR—-ASSSSSSS!!!!’ They are especially popular as one of the yummiest things to eat during Lent.
