fresh malathouni cheese

Soft fresh handmade cow’s milk cheese from Tinos, briefly aged wrapped in gauze in little baskets then hung to age. It’s often flavoured with black pepper. Very tasty table cheese, made by cheese making master Angela Roungeri.

Σκλαβοτύρι is another name.
