Spárgana means swaddling clothes, and these thin pancakes, traditionally baked on a stone on an open fire on Christmas Eve, are served in a stack representing the cloths that wrapped the infant Jesus. Chopped walnuts are stuffed in between the pancakes and the whole is drizzled with a honey syrup.
