Umbrina cirrosa collected in north Tyrrhenian sea, Tuscany, Italy

Umbrina cirrosa, the shi drum (otherwise known as the gurbell, sea crow, bearded umbrine and corb). In Greek it means ‘the Miller’.

It is farmed on Cyprus and pops up on menus, depending on the catch.
