Chloro cheese

One of the few if only cheeses made on Santoríni, chlóro is a fresh goat cheese traditionally made at home for local consumption in winter and spring, although increasingly it pops up on menus of upmarket restaurants. It has a slightly salty, sour taste, often spiced with coriander.
