An essential ingredient in bollito misto and in the favourite cold dish, lingua di vitello in salsa verde, tongue is often sold by Italian butchers cured in saltpeter and spices (lingua salmistrata). Other classic recipes include lingua al giardino, a Piedmontese recipe with a vegetable sauce and lingua in agrodolce.
