straccetti

thin slices

Literally, straccetti means 'scraps' or 'rags'. In this popular Roman dish, it's very thinly sliced beef flank, sautéed quickly with rucola (rocket) and a little garlic and parmesan. Variations include substituting artichoke hearts or mushrooms for the rocket.

Straccetti can also mean little squares of egg pasta.
