As in salmone affumicato (smoked salmon), traditionally served with pasta, cream and vodka on Valentine's Day. The biggest company in Italy, Friultrota, based in San Daniele del Friuli, specializes in smoked trout as well as other fish.

Italians also make smoked goose breast and quite a few Italian smoked cheeses, such as Panuzzu Affumicato.
