Southern Italian tortiere are baked dishes that will almost always include potatoes, along with alici, sardines or similar, or artichoke hearts. The oven dish they are baked in is also a tortiera.

In Puglia, a tortiera is a casserole of potatoes, rice, courgette and peppers, generally topped with bread crumbs.
