fresh white goat and cow's milk cheese

Soft white cheese made in Pavia and Liguria that are generally eaten fresh. The Lombard version, made entirely of cow's milk, is also known as Formaggella di Menconico.

The molana from Genoa's entroterra is in the Ark of Taste.
