DOP Puglian bread

Puglia has the best variety of wheats in Italy, and this bread, to achieve DOP-status, must be made from three varieties and have a crust measuring at least 3mm thick; the shape is unimportant. Made by local bakers in the Murgia region of Puglia, some claim it's the best in the world: you can watch how they do it here.
