Ligurian 'little belly' pasta

According to the classic recipe, pansotti are made with flour, eggs, white wine and salt, filled with mixed greens (preboggión) and topped with walnut sauce and grated Parmesan.

The Sagra del Pansotto take place in mid July near Genoa at Fontanegli.
