babà

dessert or savoury bread

Invented in France, but a favourite in Naples. The cake can be soaked in rum, or other liqueurs or just syrup, with some whipped cream, nuts, candied fruits etc. on top. Sometimes it gets an extra 'b': babbà.

Babà rustico also made in Naples, is a savoury bread packed full of cured meats and cheeses and shaped like a babà in a mold. Recipes for babà rustico sciuè sciuè means they also throw in some tomato sauce.

Also known as a ciambella rustico, ciambellone rustico napolitano or babà salato.
